Early White Vienna
Our favorite early-maturing variety. The smooth, pale green bulbs have a crisp, white flesh and mild, cabbage-like flavor—perfect for slicing into sticks and eating fresh. Also delicious boiled, creamed, frozen, in soups and pickled. For optimum flavor and texture, harvest when the bulbs are 2 to 2½ in. across. We recommend sowing this cole crop every two weeks for a successive harvest. Early White Vienna Kohlrabi is a cool-weather crop and can be sown directly into the garden for a spring or fall crop. 55 DAYS.

Superschmelz or Giant White
A fan favorite and true superhero of the late season, this giant kohlrabi boasts tender, sweet flesh that maintains its quality in storage. Superschmelz performs well under fabric and in the field. Its globe-shaped white bulbs are free of woodiness and are delicious in salads and slaws. Highly resistant to bolting, this variety is later than others, but its exceptional sweetness makes it worth the wait.
